Hmm, maybe it's related to this error:
Are you using disable_taskbar_transparency? Are you using Open Shell, Classic Shell or a similar start menu customization tool?
Maybe with your trackpad software, but I don't see how I can do it from the tweaker as it doesn't get any indication about touchbar scroll events.
What if you choose "Show thumbnail preview (default)", does that work? I suspect that it's not the tweaker's fault, since the implementation of that option is quite simple. It can also be enabled via registry without the tweaker, see:
You can exit the tweaker, try this method, and find out whether the problem is related to the tweaker or not.
The double/middle click options affect all monitors in Windows 10, too. Perhaps you didn't lock your secondary taskbar, which could make the double click not have the selected effect, but that's more of a limitation than a feature. You can try doing that on Windows 11 too if you prefer.
Edit: I checked, and on Windows 10 both monitors handle double click even if they're unlocked. So I'm not sure why you saw a different behavior on your Windows 10.
Are you using disable_taskbar_transparency? If not, then I don't think the problem you're seeing is related to 7+ Taskbar Tweaker.
Не с помощью 7+ Taskbar Tweaker. См. так же:

Как альтернатива, можете попробовать мою другую программу, Windhawk, у которой есть мод на эту тему:

For now, there's no such option, but you can configure a mouse shortcut for that using the advanced options. For example, you can configure such that Ctrl+click minimizes combined items. Refer to the help file for more details ("Minimize all group items" under "Mouse Button Control"). Let me know if you need help configuring it.
Sorry, but it's unrelated to the taskbar and is out of scope.
It's a limitation I'm familiar with. Haven't had the chance to look at it yet.

7+ Taskbar Tweaker has a mechanism to wait for the taskbar to initialize before it triggers the customization, so I don't think that's the problem. As it looks similar to the other error I linked, I have a solution in mind that might help. I'll try to implement it in a beta version and I'll let you know.
